Memorial Day cooking

Wrapping up the long weekend with a slow version of grilling:

I've got the Breeo X19 firepit along with the Breeo Searplate Griddle. Have to leave plenty of prep time for this one. It takes about an hour for the fire to get to a good state of coals then about 10-15 minutes for the plate to heat up properly. But...damn is the food great on this thing.

Not something I want to do all the time but this has been a pleasantly slow holiday weekend with gorgeous weather and this seemed like a great way to cook our Memorial Day food.
